Pav Bhaji Recipe
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1 cup cauliflower florets, boiled and mashed
- 1 cup green peas, boiled
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 green bell pepper (capsicum), finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons butter
- 1 tablespoon oil
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (optional)
- Pav (dinner rolls), lightly toasted with butter
Instructions:
- Heat oil and butter in a large pan or kadai.
- Add cumin seeds and let them splutter.
- Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.
- Add chopped onions and cook until they turn translucent.
- Add chopped tomatoes and cook until they soften.
- Add red chili powder, turmeric powder, and garam masala. Mix well.
- Add mashed potatoes, cauliflower, and green peas. Mix everything together.
- Add salt to taste and a little water if needed. Mash the mixture further to get a smooth consistency.
- Let the bhaji simmer on low heat for about 10-15 minutes, stirring occasionally.
- Adjust seasoning as needed.
- Garnish with chopped coriander leaves.
- Serve hot with butter-toasted pav, lemon wedges, and extra butter on top.
