Pav Bhaji Recipe

Ingredients:

  1. 4 medium-sized potatoes, boiled and mashed
  2. 1 cup cauliflower florets, boiled and mashed
  3. 1 cup green peas, boiled
  4. 1 large onion, finely chopped
  5. 1 large tomato, finely chopped
  6. 1 green bell pepper (capsicum), finely chopped
  7. 2-3 cloves of garlic, minced
  8. 1-inch piece of ginger, grated
  9. 2-3 green chilies, finely chopped (adjust to taste)
  10. 1 teaspoon cumin seeds
  11. 1 teaspoon red chili powder (adjust to taste)
  12. 1 teaspoon turmeric powder
  13. 1 teaspoon garam masala
  14. Salt to taste
  15. 2 tablespoons butter
  16. 1 tablespoon oil
  17. Fresh coriander leaves, chopped (for garnish)
  18. Lemon wedges (optional)
  19. Pav (dinner rolls), lightly toasted with butter

Instructions:

  1. Heat oil and butter in a large pan or kadai.
  2. Add cumin seeds and let them splutter.
  3. Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.
  4. Add chopped onions and cook until they turn translucent.
  5. Add chopped tomatoes and cook until they soften.
  6. Add red chili powder, turmeric powder, and garam masala. Mix well.
  7. Add mashed potatoes, cauliflower, and green peas. Mix everything together.
  8. Add salt to taste and a little water if needed. Mash the mixture further to get a smooth consistency.
  9. Let the bhaji simmer on low heat for about 10-15 minutes, stirring occasionally.
  10. Adjust seasoning as needed.
  11. Garnish with chopped coriander leaves.
  12. Serve hot with butter-toasted pav, lemon wedges, and extra butter on top.
